Please tell us a little about (your workplace/business)

Bushman's Restaurant & Bar is a unique Australian restaurant located at Anantara Dubai The Palm Resort & Spa. It is the first Australian, fine dining restaurant in Dubai serving authentic Aussie cuisine inspired by the outback. The menu is bursting with quirky choices, such as emu, kangaroo and very recently, crocodile. Our signature dessert, the Constructed Pavlova, is to die for and is made in a theatrical way at your table by one of our talented chefs.

What is your role at (your workplace/business)?

My current role is restaurant manager.

How long have you been working in the role and where were you working previously?

I have been in my current role almost one year and I have over 15 years experience in hospitality, working all over Australia with various hospitality brands, including Sheraton, Palazzo Versace and Park Royal Hotels.

What do you enjoy most about your job?

The best part of my job is meeting new and different people from various backgrounds. I find this really enriching and so I always make time to talk to our guests and find out more about them, which provides a personal, friendly and authentically-Aussie experience. I'm always learning from our guests too and since I moved to Dubai, I have learned a lot about different cultures.

What is the most challenging and difficult aspect of your job?

The most challenging aspect of my role so far was moving to a new country and getting to grips with the culture. Dubai is a fantastic city, but it takes time to understand the market. It's very competitive with new places opening up every day, which is why it's important to ensure that your restaurant remains current and fresh. I think Bushman's will remain very unique in the market for some time and I'm looking forward to driving the brand forward in 2015.

What does a typical day at work look like?

Each day begins with planning for the upcoming days, which takes much more time and organization if we have any special events scheduled. I work very closely with our head chef to ensure front of house and back of house are perfectly in-sync and by 4 pm each day, we're ready. Dinner service starts at 6.30pm and then each night we have fun, work hard and deliver exactly what the guest is expecting.

How do you like to spend your leisure time?

I'm a bit of a foodie, so I like dining out, particularly trying out some of our competition. I also enjoy relaxing over a nice red and some cheese or going to the movies to see the latest releases.

Do you have any general comments to make about living in Dubai?

What you put into it, is what you get out of it. It's very different living here compared to at home in Australia. It's important to surround yourself with a good network of friends and enjoy the Dubai lifestyle.

What is the best piece of advice you could give new arrivals to the business world of Dubai?

Do your research, be prepared to work hard and you will be rewarded.
